Making homemade French fries in the oven is a pretty straightforward process. All you need is some russet potatoes, oil, spices, and time. I don’t think that I’ve once measured out ingredients for this, so all amounts are “about.” A safe bet would be to start with the smaller amount of oil and add more if needed. I used sunflower oil, but you can use another high heat tolerant oil. Season your oil with any spices you like. I enjoy trying various spice combinations, and of course, I always use turmeric!
These French fries are super crunchy and delicious. Leftovers crunch up well under the broiler the next day too. I love making them to accompany a sandwich made with Soft Pita Wraps. Crunchy fries and soft pitas are an ultimate comfort combination. These fries are so lovely with homemade sauces. We make a tahini mustard sauce that is amazing with them.

Oven Baked Fries
- 4-6 medium-sized russet potatoes
- 1-2 tablespoons sunflower oil
- Salt, Pepper, spices to taste (I used turmeric, paprika, and oregano)
Preheat your oven to 450°F.
In a large mixing bowl, stir together oil and herbs. Set aside.
Wash your potatoes. Peel if desired.
Cut them lengthwise into slices, 3/8 to 1/2 inch thick. Stack slices and cut into strips.
As you create fries, toss them into your seasoned oil with a wooden spoon. Make sure all the fries get coated.
When all the fries are cut and seasoned, place them on a large baking sheet. Try to allow some space between the potatoes.
Place them on the center rack of the oven and bake at 450°F for 17 minutes.
Remove from oven. Flip fries over.
Bake another 17 minutes.
Remove from oven and allow to cool 2-3 minutes. Enjoy!
